Our collaboration with Calypso Kitchen began at the Bellingham Farmers Market. This saison was brewed with Skagit Valley malts and estate-grown hops, and then infused with Sarah’s special blend of hibiscus, clove, ginger, nutmeg and cinnamon, before it was dry-hopped with aptly named Calypso hops. Notes of spice and tropical fruit are balanced by soft, bready malts and lively carbonation.

The classic spicy and fruity notes created by our house saison yeast are an interesting complement to the berry and tropical fruit flavors and aromas of Mosaic hops, and the spicy, fruity and citrusy notes and moderate roast flavors of Ethiopian Limu coffee beans. This beer features cold-brewed coffee roasted by our friends at Bellingham Coffee Roasters.
